I apologize for the lack of updating. Law school is kicking my butt work-wise and law school culture isn’t helping. I actually had lunch with a 2L friend earlier this week to talk over my frustrations and concerns about law school and becoming a lawyer in general. I would be lying if I said from time to time I didn’t think about dropping out and pursuing some other career path (not that I have anything in mind at the moment). It’s not exactly encouraging when you tell a professor how busy and overwhelmed you are and they bitterly laugh and say, “It’s always funny to me when students think they’re so busy. Just wait until you start your career.” Gee. Thanks for your support. Couple that kind of attitude with being surrounded by panicked and overwhelmed students, and it’s not always a pretty picture. That said, I did have a great initial meeting with my career counselor today and I will be talking exclusively about that in my next entry.
Other things of note: Barack Obama has four more years in office. Consequently this gets to keep happening, and Justice Ginsburg can retire with peace of mind. I am constantly exhausted and I just added B-12 pills to my daily multivitamin in an attempt to raise my energy level. There are 13 days until Thanksgiving, 41 days until my blessed winter break begins, and 46 days until Christmas. Being in a long distance relationship is lame. The thought of final exams is daunting. I can’t wait to decorate my apartment for the holidays and start doing holiday-y things. My brain hurts.
RECIPES:
Pork Tenderloin with Pan Sauce. I don’t have any pictures of this, but the dish was faaaaantastic. I let the pork tenderloin marinate for about five hours and it was so tender and flavorful after cooking it 35 minutes in the oven.
Holy Apple Pie Muffins. These turned out delicious. Changes I made: couldn’t find sugar free apple pie filling, but at least found one with no high fructose corn syrup. Added about two tablespoons of oil to supplement the applesauce and help with texture. Used 1 whole egg and 1 egg white. And I did a little more than half a cup Stevia, and then the rest I used actual sugar as my sweetener.
Two of these with melted butter spread in the middle and a glass of milk for breakfast was the bomb.
And I did a repeat of one of my favorite recipes at the boyfriend’s request: Queso Chicken Pasta. Changes: whole wheat penne instead of regular. 2 jalapeños. 2% milk Mexican Cheese instead of Colby Jack. Whole wheat flour instead of AP. This stuff tastes like happiness in a bowl.
Sorry for a lame entry. I felt bad for not updating in so long and wanted to at least give you something. I have another big legal writing assignment due next Wednesday, but as soon as I knock that out I will give you a substantive law school update where I don’t complain about law school (too much) and actually tell you more about what is going on.
